Taco Bell copycat Crunchwrap

This quick and easy dinner recipe that is even better than the original!

  • 5 tortillas
  • 3/4 lbs steak of choice ((skirt steak used this time, but anything thin cut will work))
  • 4 tostadas
  • 1/2 can refried beans
  • 1 cup shredded cheese
  • 4 handfulls shredded lettucee

Instructions

  1. Marinade steak in marinade of choice. This can be as simple as salt and pepper or as complex as you like. We like to use lime juice, avocado oil, and hot sauce. If you have time, 30 minutes is great. If you don't salt and pepper right before cooking will still be delicious.
  2. Fire up the grill! As hot as you can get it. If you would rather cook on the stove, get a pan good and hot.
  3. Cook steak for approximately 2 min per side.
  4. Let steak rest, while you start on the rest of the crunchwraps.
  5. Heat up refried beans.
  6. Start heating up either a panini press or a pan.
  7. Cut one of the tortillas into quarters and set aside.
  8. Start constructing the crunchwrap. Put down a tortilla, add a little cheese, put down a tostada, refried beans, steak, cheese, and lettuce. Then put the quarter of a tortilla, and start folding over the tortilla.
  9. Put the crunchwrap, folded side down onto the panini press or pan. If using a press, close the press and cook the crunchwrap for approximately 3-5 minutes, until toasted golden brown. If using a pan, press the crunchwrap down, and cook for approximately 3-5 minutes, until the one side is toasted golden brown, then flip, and do the same.
  10. Serve hot!

Notes

For personal preference reasons, we skipped the sour cream (which my husband is not a fan of), tomatoes (which neither of us are fans of in a crunchwrap), and added refried beans, which is a twist on the classic Taco Bell crunchwrap. You can easily add, remove, or modify this recipe for your taste. You can add salsa, hot sauce, onions, peppers, or anything else you think sounds delicious!
