One of the things I love most when we go camping is planning out our meals. And, I have a passion for what I call “fancy s’mores”. These a s’mores that are all grown up. I started years ago, with my original strawberry shortbread s’mores. Every camping trip I concoct a different version of adult s’mores. And, these delicious dark chocolate s’mores with fresh blackberries and salted caramel are a must for your next camping trip. Or just because in your backyard fire pit!
I haven’t been great at documenting the gourmet s’mores we make for our camping trips. Usually once it’s time to eat s’mores it’s dark outside and not the best for photography. I’m often tired from a day full of fun activities. But, these dark chocolate blackberry s’mores with salted caramel were so good I knew I had to document this one.
I’ve made s’mores with homemade cookies as well as store bought. In my opinion, homemade is always better, but sometimes the reward vs the work isn’t worth it. Channeling my favorite Barefoot Contessa, if you don’t have time for homemade, store bought will do. For this recipe, I used a delicious cookie from Rustic Bakery that tastes delicious and is so much easier when you’re getting ready for a big camping trip. If blackberries are in season during your camping trip, spending time picking fresh black berries would be a fun and delicious activity. Freshly picked wild blackberries are always sweeter than store bought.
