Yes, you read that right, jalapeño popper grilled cheese!
This is *THE* grilled cheese. The one, and only grilled cheese you will ever need. The grilled cheese to rule them all. The grilled cheese that makes your boyfriend propose, or your mother in law to finally take you seriously.
I was actually dating for 3 years before we got engaged and have a lovely mother in law, so I’m not so sure about those last two, but the point is, this grilled cheese is good. Really, really good. It’s a little spicy from the jalapeño, a little smokey from the bacon, creamy from the cream cheese, bite from the sharp cheddar, and crisp from the bread. Everything you would want in a sandwich.
We made this for date night at home one evening while playing board games. It would also be great while watching the Super Bowl, or if you just want to elevate your grilled cheese game! I like fairly spicy, so I used a whole jalapeño and left some of the seeds. If you want spicier, leave all the seeds. If you want a more mild sandwich, you could scoop out all of the seeds, and use half a jalapeño.
When we make hot sandwiches, I love using my panini press, which is actually also a griddle, and a waffle maker! It is such a great kitchen appliance and gets quite a bit of use being 3 in one instead of having three separate appliances.

Ingredients
- 1 whole jalapeño
- 2 slices bacon
- 2 slices artisan bread of choice
- 1 tbs cream cheese
- 2 slices sharp cheddar cheese
Instructions
- Preheat oven to broil
- Broil jalapeño until skin is roasted and blistering, remove from oven, allow to cool until you can handle, and slice into ~4 strips
- Cook bacon
- Assemble sandwich, spread cream cheese on one side of each piece of bread, add jalapeño, bacon, and cheddar
- In skillet, or griddle, toast sandwich until golden brown
- Enjoy hot!
