These make ahead camping breakfast burritos are taken from a grade A breakfast to an A+++ by getting them all good and tasty in the campfire!
1 carton dried hash browns
1 medium onion
1 bell pepper
5 strips of bacon
5 eggs
Handful of shredded cheese
salt & pepper
4 large tortillas
aluminum foil
Rehydrate hash browns according to the package.
Chop onion, pepper, and strips of bacon.
In a large pan, heat oil over medium high heat, add onion and pepper.
Let cook until onion starts to get translucent, then add bacon.
Cook until bacon is almost all the way cooked through, then add potatoes.
Scramble eggs in a bowl and set aside.
Cook mixture in pan until potatoes begin to brown, make a well in the middle of the pan, and add eggs.
Scramble eggs in the well in the pan until eggs are scrambled.
Turn off heat, top with cheese, mix all the ingredients in the pan.
Divide pan into 4-6 sections.
Spoon each section into a tortilla and wrap up.
Wrap in aluminum foil to save for later
To reheat over a campfire, either use a grate over a lower section of the fire, or place directly on spread out coals. Heat for approximately 10-15 minutes, until warm all the way through.
