These pumpkin pie overnight oats are the perfect combination to create a fall inspired creamy and delicious breakfast that is healthy too!
2/3 cup oats
2/3 cup milk of choice
1 tsp chia seeds
2–3 tbs pumpkin puree
1/4 cup yogurt of choice (or half a small yogurt container)
1 tsp vanilla extract
1 tsp pumpkin pie spice
healthy drizzle of honey (optional – to taste)
Mix all ingredients in a pint size mason jar. I find the wide mouth jars work the best.
Put in the fridge overnight and enjoy cold or hot the next morning. You can make a couple day’s worth at once. They get better every day!
I suggest tasting your oat mixture before adding honey. Depending on if your yogurt has sweetener, you may find that you don’t need the honey. If you want to add more protein, add in collagen peptides which are tasteless and will boost the protein in the oats. To enjoy hot, microwave for one minute, stir, then microwave for one more minute.
