Quick, easy, delicious and healthy! This Southwest Shrimp Bowl is perfect for lunch or dinner. It’s bright and tasty that everyone loves!
4–5 large shrimp per person
2–3 limes juiced or 4–6 tbs lime juice
1/2 bunch of cilantro roughly chopped
1–2 tbs honey
1–2 tbs of olive oil
pinch of red pepper (more for spicy lovers, or can be left out)
pinch of salt
2 garlic cloves chopped
handful of lettuce per person
1/4–1/2 cup of cooker rice per person
1/4–1/2 avocado per person chopped
2 tbs black beans per person
2 tbs corn per person
Marinate shrimp in lime juice, cilantro, olive oil, honey, red pepper, salt and garlic. Ideally for 30 minutes, but if time doesn’t allow no marinating time is necessary.
Heat a pan over medium heat, add shrimp with marinade to pan and cook until shrimp is pink about 5 minutes
Put together bowl with lettuce, cooked rice, avocado, black beans and corn. Add shrimp with sauce from the pan.
Dig in and enjoy!
