Strawberry balsamic chicken salad, aka, the best salad ever. The salad your fiance (eek! still not over that yet!) will ask for again and again. Just throwing it out there if you feel like being a kitchen goddess. It’s good, it’s healthy, it’s also filling. You don’t eat this and then go scrounging around the house looking for other things to fill you up. Am I the only one? I hate that! I want dinner to fill me up. Not walk away stuffed, but also not walk away feeling like I have to dig through the cabinets trying to find something else to eat.
We love date night, I’ve written about it a ton. Like you can see my fall date night ideas, or my winter date night ideas, or my summer date night ideas, or countless other posts I’ve mentioned how much we love date night. Clearly I need a spring date night post! Next year. Back to the subject at hand, date night. While we love date night, now that we have a wedding to save for, date nights at home have become more of a staple around here. This salad is an awesome date night at home dinner. Cooking together, is one of my all time favorite date nights at home. Then you can eat this by candle light while splitting a bottle of wine. Perfection if you ask me! The strawberries add just a hint of sweet and the mozzarella adds some rich creaminess. The whole salad bursts with flavor.
We like to eat what’s in season, and what we can get locally, so the fruit in this salad can be changed out seasonally if you desire. Strawberry is the classic, but later in the summer it could easily be blackberries, or pears in the fall. Delicata squash in the cooler months would be delightful as well.
As for the nuts, pecans are my favorite, so that’s always what I have on hand. But, you could throw in there whatever is your favorite. Walnuts or slivered almonds would be just as delicious. That is just another way to mix it up while keeping the same base salad. That is something that we do a lot, have a base, whether it’s a salad, smoothie, stir fry, whatever, and then just mix up a few ingredients to make something different each time. It keeps us from getting bored, eating the same thing over and over again. But, it also keeps it easy. We get really good at making the base, and the more you make it, the more it’s on autopilot. This makes weeknight dinners when we both are working quick and easy, while still being healthy and nutritious.
Strawberry Balsamic Chicken Salad
Strawberry Balsamic Chicken Salad is a light but filling dinner that’s perfect for weeknights or a light date night at home.

Ingredients
- 1 large chicken breast
- 3 Tbs balsamic vinegar
- 2 Tbs apple cider vinegar
- 1/2 can diet ginger ale
- 1 Tbs vverything but the bagel seasoning
- 1/2 Tbs dried rosemary
- 1 tsp honey mustard
- 2–4 cups mixed greens
- 8–10 mini mozzarella balls
- 6 ish strawberries
- 2 Tbs Pecan bits
- 2 Tbs olive oil
- 2 Tbs vinegar
Instructions
- Marinade chicken breast in balsamic vinegar, apple cider vinegar, diet ginger ale, everything but the bagel seasoning, rosemary and honey mustard for 1-4 hours.
- Preheat oven to 425.
- Cook for 15 min, check, cook in 5 min increments until done.
- Prepare salad
- Add mixed greens, mozzarella balls, sliced strawberries, and pecan bits to a bowl.
- Mix with olive oil & vinegar.
- Slice chicken, plate salad, add 1/2 chicken breast to each plate.
