Know what is even better than leftovers? Using leftovers to make sandwiches and having a picnic! When we have nothing but odds and ends in the kitchen and pantry, we love making meatloaf. It’s a great way to use up the ends of veggies, spices, condiments, sauces, eggs, crackers, meat, whatever we have from the previous week that went unused. And, then the next day, you can make leftover meatloaf sandwiches.
With Covid precautions still in full swing around here, we have been spending a lot more time at home this summer, and have really embraced having date picnics. It’s a lot more fun that just sitting down to eat. We go all out, with the blanket, cutesy plates and dishes, flowers, and, of course, wine.
We don’t always have them in the backyard, but it’s quick and easy that way and makes it not a huge ordeal. And, with everything else going on in the world, not making something more difficult than it has to be, is really nice right now.
So, we packed up our sandwiches, and picnic supplies and took them to the backyard! We chatted about everything under the sun, while sitting in the sun, and enjoying each other’s company. Cheers to that!
Leftovers Sandwiches Picnic Menu
- Leftover meatloaf sandwich with cherry chipotle BBQ sauce and crisp lettuce on toasted bread
- Crispy things (We love these cauliflower crunchies)
- Something sweet (like nectarines)
- Mineral water (Topo Chico of course! You know my love of Topo Chico!)
That was it. Easy. And a lovely way to spend an afternoon.
