Dark Chocolate Red Velvet Strawberry S’mores

Summer and s’mores go together hand in hand. When we go camping, I love making what I call “fancy s’mores” which are a more adult twist on the childhood classic. A couple of summers ago, I came up with these Dark Chocolate Red Velvet Strawberry S’mores that were so good, I had to share them on here.

The soft chew from the cookies, paired with the bitter chocolate and the juicy strawberry all sealed with a toasted marshmallow is just so good. To channel my inner Ina Garten, homemade red velvet cookies would be best, but store bought will do. I used store bought when I took these pictures so it would be an easy summer dessert and they were delicious.

Like I said, usually, we have fancy s’mores while on camping trips, but they are also great as a dessert to feed a crowd for any summer party, backyard BBQ or 4th of July gathering. They are fun for kids and adults alike. If kid’s aren’t crazy about dark chocolate, you can substitute white chocolate as well in these s’mores for an even sweeter treat.
