Camping is one of the handsome hunk and I’s favorite summertime activity here in the Pacific Northwest. The weather is perfect for camping, sunny and warm. There are so many places to enjoy the outdoors and connect with nature. And then of course, there is the s’mores. And we like to make gourmet s’mores.
One of our favorite places to camp is Cove Resort at Fish Lake. If you have the opportunity to camp here, take it. The campgrounds at Fish Lake are tucked away in the woods, where the sun rays dance through the trees. If you’re lucky, you can snag a spot right on the lake itself. The grounds are first come first serve, so get there early if you want a good spot. Or, on a holiday weekend, if you want a spot at all.
The past two summers we have gotten the very last spot for Memorial Day weekend. While I like to think we have good luck (and we do!) that’s cutting it a little close for my comfort. So next year, we are planning to take off a day early and not play the, will we or won’t we get a spot, game.
The lake itself is a pure gem. You can bring your own boat, and unlike many of the surroundings lakes where you have to take your boat out every night, at Fish Lake, you can leave your boat in the water all weekend (or however long you’re camping) which makes every day just that much easier. If you didn’t bring you own boat, (or you sold all your boats and your girlfriend is super picky about the new one you buy… sorry babe) have no fear, they have boats available for rent as well. Small row boats available by the day, or larger pontoon boats you can rent by the hour. The boat rentals are on the rustic side. But, they are very reasonably priced, and if you have sunshine, some tunes on your waterproof portable speaker, a cooler with some beers, and great company, what more could you want? Side note we just got this speaker this summer and have been using it non stop! Boating, camping, backyard BBQs, you name it!
But, now, back to the gourmet s’mores. Last time we went camping, we wanted to make s’mores that were a little something extra. After a long day on the water, I wanted to indulge in something sweet. And, while there is never anything wrong with the classic, I wanted a version that was more an adult s’mores. So, these bad boys were born.
They are so good. Incredibly indulgent. You probably don’t want to eat more that one. More than that will surely blow your diet. But, it’s hard to say no. The shortbread cookie in place of the graham cracker pairs perfectly with the fresh strawberries. Leftover strawberries can be used in your camping cobbler or just to snack on! And, white chocolate melts into the marshmallow. It’s out of this world.

Ingredients
- 2 Shortbread Cookies
- 1/2 Large Strawberry Sliced
- 1/4 White Chocolate Bar
- 1 Marshmallow
Instructions
- Build your fire
- Find the perfect marshmallow roasting stick or extendable roasting sticks
- Roast marshmallow to your desired level of doneness
- Assemble s’more with two cookies, white chocolate chunk, strawberry slices, and marshmallow
- Pop in your month and enjoy!
