Who doesn’t love a little bubbly in their life? There is something that makes a bubbly cocktail just so much more fun. Who’s with me? And this bubbly grapefruit mint cocktail does not disappoint.
There is a local distillery here that makes amazing limoncello. And, so of course, we had to pick up a bottle. If you can find Valley Shine, I definitely suggest you picking up a bottle too! It helps that there isn’t a bottle of limoncello I’ve met that I haven’t liked. So, it took it upon myself to up my limoncello drinking game with making a fun new cocktail with it.
Grilling season is still upon us, which we celebrated by buying a new grill. The handsome hunk has been eyeing one for ages, literally years. Like, since we met, he has been talking about buying a new grill. One thing I love about that man, is he doesn’t spend frivolously. He is very financially stable, he researches whatever he is buying to death. But, boy, oh boy, it was time to get him a new grill! So we finally decided to pull the trigger and upgrade his grill. We love grilling up delicious meals, and of course need a cocktail that stands up to the yummy food. In the warmer months, I can’t get enough citrus, and the grapefruit paired with mint is so summery and downright delicious. And, will hold its own against anything you cook.
- 1 oz limoncello
- 1 can of grapefruit soda
- Muddle mint in the bottom of a highball glass.
- Fill glass with ice.
- Add 1 oz of limoncello.
- Fill with grapefruit soda.
- Stir to incorporate.
